You can change the text but be careful not to change the timeline. It seems like it would be an arduous task if there were a lot of dialog.

Rob, thanks for clarifying.  Is there any way to correct the errors in the captioning once they have been added?  Or do you have to go in and manually fix them in the file that is created before you add them to the video?

Adam, I can't say whether or not the actual subtitles are indexed separately , but it does give the actual video better seo value by making it more clear to the search engines that the actual content of the video matches the title, tags and description. Once they are uploaded to Youtube you can simply add the captioning. I will look into the product mentioned by Mark, that could really save the time it would take to correct the text before uploading.

Rob, does Google index the subtitles separately from the video?  We are using cDemo to do video walk arounds on all of our used cars.  We do have to edit the videos once they are uploaded to YouTube, but this doesn't seem like that much more work if you are getting the added SEO value.

As you can see this is not an exact science. It is a bit cumbersome, but can have profound SEO/VSEO benefits. It is possible to edit the caption prior to uploading to the video. It will take a few tries to get it right and may become a lot easier as you apply it more often. Hope this was helpful.
